As a product manager by profession, I believe in costumer feedback early on when I am developing a product. Being at a street food market allows us to test new dishes and recipes and get immediate feedback from our costumers that we meet face to face, something that has helped us shape our menu and we hope to continue doing so. Also being at a street food market makes it easier to get exposure as the costumers are already there, all you have to do is attract them to your stall, while opening a restaurant or a dark kitchen requires for you to drive traffic to your business.
